Ingredients

1 baguette or rustic Italian bread, sliced 200g ripe tomatoes, chopped
2 cloves garlic

50ml tomato juice and 1 tsp lemon juice

2 tbsp extra virgin olive oil 1 tsp sugar and 100ml heavy cream
Fresh basil leaves, chopped Salt and pepper and whipped cream charger

Instructions

To prepare the bruschetta, start by heating the oven to 200°C (390°F). Arrange the bread slices on a baking sheet, brush them lightly with olive oil, and toast until golden and crisp. While still warm, each slice is rubbed with a cut garlic clove to infuse a subtle aroma, then set aside.

For the tomato foam, the tomatoes are blended together with tomato juice, lemon juice, sugar, salt, and pepper until smooth. The mixture is then strained through a fine sieve, leaving a silky liquid that is enriched with a touch of cream to help the foam hold. This base is poured into a cream whipper, connect with a N2O cream charger, and shaken well before resting in the refrigerator for 10–15 minutes, ready to be served on top of the bruschetta.

Crown each crisp slice of toasted bread with a delicate cloud of tomato foam, allowing its lightness to contrast beautifully with the crunch beneath.
