The Background of Viennese Swirls

Viennese swirls are not actually from Vienna, but rather a British creation inspired by the buttery pastries of Austria. These biscuits became popular through afternoon tea culture in the UK, where they quickly earned their place as a beloved treat. They are known for their distinctive piped swirl shape, a pattern made with a piping bag that gives them a delicate look. Over the years, they’ve often been sandwiched together with buttercream and jam, but many modern versions add a lighter twist with freshly whipped cream.

 

What They Taste Like

The texture of a Viennese swirl is crumbly and tender, melting almost instantly once it hits your tongue. The buttery flavor is rich but not overpowering, and when paired with cream and jam, it balances sweetness with a soft richness. When you add whipped cream made with a nitrous oxide tank, the biscuits become even more indulgent, with a filling that’s light, airy, and perfectly smooth.

 

Ingredients You’ll Need

250g unsalted butter, softened

60g icing sugar

250g plain flour

60g cornstarch

1 tsp vanilla extract

3 tbsp raspberry jam (or strawberry if preferred)

250ml heavy cream

1 cream charger

Making the Swirls

Begin by mixing the butter and icing sugar until the mixture is pale and creamy. Stir in the vanilla, then sift together the flour and cornstarch before folding them in. The dough should be soft enough to pipe but firm enough to hold its shape. Spoon the mixture into a piping bag fitted with a star nozzle and pipe neat swirls onto a baking tray. Bake them until pale golden, letting the biscuits cool completely so they don’t crumble when handled.

Once the biscuits are cool, prepare the filling. Spoon raspberry jam onto half of the biscuits, spreading it gently to the edges. For the cream, pour chilled heavy cream into the cream dispenser, connect it with a cream charger tank, and release a swirl of freshly n2o whipped cream onto each biscuit. Top with another swirl-shaped biscuit, pressing lightly so the filling peeks out.

 

The result is a batch of sandwich biscuits that look impressive but feel comforting. The delicate butter swirls almost fall apart in your mouth, while the jam and whipped cream make every bite soft, sweet, and balanced.
