A Sweet Story from Catalonia

Long before creme brulee took the spotlight in French patisseries, Spain’s Catalonia region was already caramelizing sugar atop its own custard masterpiece — Crema Catalana, or Catalan Cream. Traditionally served on St. Joseph’s Day, this golden dessert is as much a symbol of warmth and celebration as it is of comfort. With its silken custard base scented with citrus and cinnamon, and a thin caramel shell that cracks under your spoon, it’s a dessert that feels both rustic and regal.

 

Today, we’re giving this old-world favorite a modern twist — by finishing it with freshly N2O whipped cream made using a cream charger, creating a cloud of light sweetness over that classic, caramelized top.

 

The Texture and Taste

Catalan Cream is elegance in simplicity — a smooth, cool custard with notes of lemon zest and cinnamon whispering through each bite. The top layer, a glassy sugar crust, shatters like thin ice, revealing the soft, creamy heart beneath. With a dollop of fresh whipped cream, the contrast becomes irresistible: warm and cold, crispy and airy, sweet and delicate.

What You’ll Need

480 ml whole milk

240 ml heavy cream

5 large egg yolks

100 g sugar

1 strip lemon peel

1 small cinnamon stick

1 tbsp cornstarch

1 tsp vanilla extract (optional)

Creating the Cream

Start with your milk and cream — pour them gently into a saucepan with the lemon peel, orange peel, and cinnamon stick. Warm the mixture slowly, just until it begins to steam and the air smells like a Spanish kitchen in spring. Remove from heat and let the flavors mingle for a few minutes — patience here brings depth.

 

Meanwhile, whisk together egg yolks, sugar, and cornstarch until the mixture turns pale and thick. Strain out the citrus peels and cinnamon from the warm milk, then gradually pour the infused milk into your egg mixture, stirring continuously to keep it silky. Return everything to the heat and let it thicken into a custard that coats the back of your spoon — never rush it, or you’ll lose that smooth, luxurious texture.

 

Pour the custard into ramekins and let them cool, then chill in the refrigerator until set — cool, calm, and golden. When ready to serve, sprinkle each with a fine layer of sugar and caramelize it with a kitchen torch until it bubbles and hardens into amber glass.
