You don’t need a stand mixer or electric beater—just a whipped cream dispenser and a single nitrous oxide tank, and you’re ready to create the kind of dessert that looks and tastes like it came from your favorite pastry shop.Whether it’s for brunch, a party treat, or a sweet afternoon break, these donuts are guaranteed to impress.

 

Ingredients

For the Donut Dough For the Whipped Cream Filling
300g bread flour and ½ tsp salt 250ml heavy cream (chilled, minimum 35% fat)
50g granulated sugar 20g powdered sugar (adjust to taste)
5g dry yeast and 1 large egg ½ tsp vanilla extract
150ml warm milk and Neutral oil for frying (canola or vegetable) 1 whipped cream dispenser and 1 n2o charger
40g unsalted butter, softened Gas cylinder regulator

Instructions

Step 1: Prepare the Donut Dough

Stir yeast into warm milk and let sit for 5 minutes until foamy.

In a mixing bowl, combine flour, sugar, and salt. Add egg and the milk-yeast mixture.

Mix until dough starts to form, then knead in the softened butter. Continue kneading until the dough is smooth and elastic.

Cover with a damp cloth and let rise in a warm spot for about 1 hour, or until doubled in size.

Roll out the dough to about 1.5cm thick (~½ inch) and cut out donut shapes using a donut cutter or two round molds.

Let the cut dough rest for a second rise—about 30 minutes.

 

Heat oil to 170°C / 340°F and fry each donut for about 1 minute per side, until golden brown. Drain on paper towels and cool completely.

Step 2: Make the Whipped Cream with a Cream Charger

Pour chilled heavy cream, powdered sugar, and vanilla into the cream dispenser.

Screw on the top, Use a regulator to connect the N2O tank to the dispenser.

Shake the dispenser 20-30 times to distribute the gas evenly.

Remove the charger and test a small amount—your whipped cream should be thick, airy, and pipeable.

 

Step 3: Assemble the Donuts

Once the donuts have cooled, use a piping nozzle to fill them with cream—or pipe the whipped cream directly on top in a spiral.

 

Dust with powdered sugar or cocoa powder, or decorate with berries, sprinkles, or melted chocolate.

Serve immediately, or chill for 15 minutes for an even smoother texture.

Keep it cold: Always use chilled cream (around 39°F / 4°C) for best results.

Use food-grade N2O canisters: High-purity nitrous oxide ensures stable and clean flavor.
