Mango pancakes — soft, crepe-like wrappers filled with fresh mango and silky n2o whipped cream — are a beloved Asian dessert that’s now winning hearts around the world. The secret to that cloud-like cream? A cream charger paired with a pressure regulator. This setup gives you full control over cream density, producing a professional-quality texture that’s stable, airy, and irresistibly smooth.

 

Ingredients (Makes 6–8 pancakes)

For the Pancake Wrappers For the Whipped Cream Filling
2 large eggs and 240 ml milk 480 ml chilled heavy cream
100 g cake flour or all-purpose flour (sifted) 3 tablespoons powdered sugar
2 tablespoons sugar 1 teaspoon vanilla extract (optional)
2 tablespoons melted unsalted butter 2–3 ripe mangoes, peeled and cut into thick slices
A pinch of salt

Instructions

Step 1 — Make the Pancake Wrappers

  • In a mixing bowl, whisk together eggs, milk, sugar, melted butter, and salt.
  • Sift in the flour and whisk until smooth.
  • Let the batter rest for 30 minutes.
  • Heat a non-stick pan over low heat and pour in just enough batter to cover the bottom.
  • Cook until the surface is set (no flipping needed). Repeat for all pancakes and let them cool completely.

 

Step 2 — Whip the Cream

  • Pour chilled heavy cream, powdered sugar, and vanilla extract into your cream whipper.
  • Attach the pressure regulator to the whipped cream charger.
  • Charge the whipper and set the pressure to 8–10 bar for soft, fluffy peaks (adjust higher for firmer cream).
  • Shake gently 30 times and refrigerate for at least 20 minutes for maximum stability.

 

Step 3 — Assemble the Mango Pancakes

  • Place one cooled pancake wrapper on a clean surface.
  • Pipe a layer of whipped cream into the center.
  • Add a slice or two of mango, then top with a little more cream.
  • Fold the edges over to form a neat parcel, with the seam side down.

 

Step 4 — Serve & Enjoy

Serve immediately or refrigerate for up to 2 hours. The combination of soft pancake, sweet mango, and airy whipped cream is pure indulgence.
